Ragnaröky Road Brownies*

 

*These are gluten free! WHAT?!?

Thor can’t save us now, and neither can any of those other Norse Gods because the cosmos and everything in it is about to be destroyed. It’s Ragnarok! So I say fuck it, let’s fill up on some delicious rich brownies filled with all the good stuff: chocolate, butter, sugar, marshmallows, almonds… These are even gluten free so those who can’t normally indulge get to partake in this end of the world goodness.

It’s almost your standard brownie recipe, the difference is rice and almond flour (that’s what makes these suckers free of gluten). You should be able to find it at your normal grocery store even if it’s being looted for essentials because lets face it most people don’t realize dessert IS an essential, and would overlook it on the shelves. 

First things first, get a pot of water on the stove and bring it to a simmer. Or if you’re feeling adventurous, and happen to be in Asgard or on the rainbow bridge, take that pot of water outside! It’s probably hot enough out there considering Surtr, the fire giant, just set everything aflame. Once the pot is simmering, put a heat safe bowl containing your chocolate and butter on top of the pot and let the gooey stuff melt. Return to stir it every now and again so the chocolate doesn’t burn, along with the last remnants of civilized society.

While that’s melting, combine your eggs, sugar, and salt in a stand mixer bowl, or a regular bowl if you don’t have one of those. Whisk until it’s at the ribbons stage (that’s when you lift the whisk out of the bowl and slowly move it back and forth so it creates a sort of snake from the whisk to the rest of the batter in the bowl. It should sit on top of the batter for a few seconds before blending back in with the rest.) At this stage, add in the vanilla and whisk that in until just incorporated.

In a separate bowl, combine your dry ingredients (almond flour, rice flour, cocoa powder, and baking soda). Whisk those together and set them aside. If an ice troll interrupts your whisking, kill it with fire.

Return to the blazing heat to retrieve your melted butter and chocolate. Make sure to wear oven mitts because that bowl will be really hot and the steam from the pot below could burn you. Steam burns aren’t fun. I know from experience.

Pour your melted chocolate/butter into the bowl with the eggs and sugar, and mix until combined and smooth. Finally add your dry ingredients in and mix those until smooth. (usually I’d say to be careful not to over-mix, but since there’s no gluten in this, that’s not really a problem)

Prepare a pan for baking (I like to use a half sheet pan, but an 8x8 or 9x13 inch pan should work as well). Heavily spray the whole pan and place a piece of parchment paper on the bottom. Spray the top of that too for fun. Pour your brownie batter into the pan and spread it across evenly.

Once that’s all done, take your chopped almonds and mini marshmallows and sprinkle those on top. Put it all into the oven (that’s what I’m calling outside) at 325º F and bake. For the 20-25 minutes that it’s baking, go help those pesky gods fight their war to end all wars, and if you survive, come back and check to see if the brownies are done. I like mine to be a little gooey so I know they’re done when a toothpick that’s inserted into the middle of the pan comes out with a bit of brownie stuck to it, but that brownie shouldn’t be shiny. If it’s shiny then it’s not done yet, unless you like your brownies to basically still be brownie batter which is also delicious but would probably kill you even before the giants could!

 

These brownies can be kept at room temp in an airtight container for 3-5 days, or frozen for like a month (I haven’t been able to make it past that because the roaming wasteland survivors keep stealing them from my freezer).

Ragnaröky Road Brownies


  • prep time: 20 min
  • cook time: 25-30 mins
  • total time: 45-50 mins

Ingredients:

  • 525 g. Dark Chocolate
  • 260 g. Butter
  • 5 ea. Eggs
  • 500 g. Granulated Sugar
  • 185 g. Brown Sugar
  • 1 tsp. Salt

  • 2 tsp. Vanilla

  • 104 g. Almond Flour
  • 104 g. Rice Flour
  • 104 g. Cocoa Powder
  • 1 tsp. Baking Soda

  • ¼ c. Chopped toasted almonds
  • 1 c. Mini Marshmallows

Instructions:

  1. In a bowl over a pot of simmering water, melt your butter and chocolate.
  2. While that melts, prepare your ½ sheet pan by generously spraying it and putting a piece of parchment on the bottom, then spray the top of that parchment too just to be safe. (a 9x9in pan can be used it’ll just take longer to bake.
  3. Combine your eggs, sugar and salt and mix in mixer with paddle attachment (or by hand is ok if you don’t have a mixer, a hand mixer will be ok too).
  4. Add vanilla and mix until combined.
  5. In a separate bowl combine almond flour, rice flour, cocoa powder, and baking soda, whisk together.
  6. Pour melted butter/chocolate into egg mix, and mix until combined.
  7. Add in dry ingredients and mix until combined.
  8. Pour batter into prepared pan
  9. Sprinkle marshmallows and almonds evenly across the top.
  10. Bake at 325º F for 20-25 mins (will take longer in a 9x9in pan) or until a toothpick comes out with only a little bit of brownie on it and that brownie is not shiny.
  11. Cool and enjoy!
