Covfefe Cake

Why hello everyone! I’m going to keep this post short because all of the impeachment hearing stuff from this week has given me a stress induced migraine. WOOOOOOO


Anyways, in honor of the live hearings this week, I made a little “covfefe cake” to eat while watching our government collapse in on itself. So, without further ado…it’s time to GRAHAM breakfast by the p**sy and make some COVFEFE CAKE. (Sorry that joke was a bit crass but like I HAD to?)


ALRIGHT so first things first is to make the topping part. I always like to do this first because then my cake batter doesn’t have to sit out while I make it later. Okay so the topping is very easy. I like to do it all in my food processor, but you can use a mixer or just do it by hand if you want too. Basically it’s two steps:

Step one - combine sugar, graham crumbs, salt, and cinnamon and mix until combined.

Step two - add in your cold, cubed butter and mix until only pea sized pieces of butter remain.

that’s it….then all you have to do is set that aside until you’re ready to put it on top of the coffee…I mean covfefe….cake.


Cool! Now we can make the covfefe cake batter. First things first, brown your butter. Make sure to remove the butter from the heat the MOMENT it begins to brown. It’ll continue to brown while it cools so if you don’t pull it immediately then you’ll end up with burned butter instead of browned.


While your butter is cooking, combine your sugars and salt in your mixing bowl. Once the butter is ready, pour that into your bowl and mix until combined (there might be some butter trying to stay un-mixed in and that’s ok). Now, add your egg and vanilla and mix well until completely smooth. It’ll probably take a couple minutes.


While that mixes, combine your flour and baking soda & powder in a separate bowl and whisk together. Then combine your sour cream and buttermilk and whisk together.


Once the sugar/egg mix is nice and smooth, sift in your dry ingredients and mix until it’s JUST started to combine. There will be some dries around the edge and that is ok. Then pour in your sour cream/buttermilk and mix until batter is smooth.


Grease an 8x8 inch pan well and pour your batter into it. Then cover the top with the topping and bake at 350ºF for about 35 - 40 minutes or until a toothpick inserted into the middle comes out clean. Then, just enjoy it while you enjoy the trumpster fire of an administration as they attempt to pretend they’re not all crooks and evil horrible humans.

Covfefe Cake

  • prep time: 15-20 mins
  • cook time: 35-40 mins
  • total time: 50 mins - 1 hr

Servings: 1 8x8 inch pan


Topping

Ingredients:

  • 83 g. Butter, cold and cubed
  • 75 g. Sugar
  • 120 g. Graham Crumbs
  • 2 g. Cinnamon
  • 3 g. Salt

Instructions:

  1. Combine everything except the butter in bowl of food processor and mix to combine.
  2. Add in butter cubes
  3. Pulse until only pea sized pieces of butter remain
  4. Spread evenly onto the top of the coffee cake batter.

Coffee Cake

Ingredients:

  • ¼ c. Brown Sugar
  • ½ c. Sugar
  • ¾ tsp. Salt
  • 8T (1 stick) Butter, Browned
  • 1 ea Egg, Whole
  • 1 ½ tsp Vanilla Extract
  • 1 ½ c. AP Flour
  • 1 ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 c. Sour Cream
  • ⅓ c. Buttermilk

Instructions:

  1. Brown your butter. Make sure to remove pot from heat the moment the butter starts to brown. It’ll continue to brown as it cools down.
  2. Combine sugar, brown sugar, salt and butter in the bowl of a standing mixer, or regular large bowl if you have a hand mixer. Mix with paddle attachment until combined, the butter will try and separate which is ok.
  3. With the mixer still running, add you egg and let that mix until smooth and completely combined.
  4. Add vanilla and mix until smooth again.
  5. In a seperate bowl, combine your flour, baking powder, and baking soda, then sift those into the mixer with the rest of the incredients so far.
  6. Mix just until it starts to combine. There should still be a lot of dries unincorporated.
  7. Combine your sour cream and buttermilk and whisk together, then add those into the mixer and mix until batter is smooth.
  8. Pour into a greased 8x8 inch pan and top with cinnamon graham streusel.
  9. Bake at 350ºF for about 35-40 minutes, or until a toothpick inserted into the center of the pan comes out completely clean.
  10. Let cool then enjoy!
